Head Of Gonzales Jambalaya Festival Association Dies

The Gonzales Jambalaya Festival Association is announcing the death of its longtime leader.

Wally Taillon, who became known as Mr. Jambalaya, passed away on Monday. Taillon competed in the Jambalaya Festival for 15 years and won it twice.

He then joined the association in 1994 and ended up being its leader for more than 20 years.

The Gonzales City Council honored Taillon in 2023, declaring January 23rd of that year as Wally Paul Taillon Day in the city.
